At a certain temperature (40±0.2℃) and corresponding pH conditions (acid protease pH3.0, neutral protease pH7.5, Alkaline protease pH10.5, Ceratinase pH10.5), the amount of enzyme reguired to hydrolyzecasein to 1 ug of phenolic amino acids (represented by the tyrosine equivalent) within 1 min is defined as one enzyme activity unit (U).
